The only thing I ever wanted to do when I grew up was be a stay at home mom. I got my degree and had a great job, but I wanted to be home. Being home has been amazing and I wouldn’t take that away for anything. But I must say that by adding coaching to my job duties has really changed my life just as much as becoming a mom has. I love mentoring other women, especially moms, into being even better at what they do. I was invited to be the guest speaker on Sarah Try's team call on Tuesday. I was there on vacation but I still made it work. I had to do the call in the stairwell of our hotel but it went smoothly. I was nervous that almost 800 people were invited to listen! It was nothing life shattering but good info for busy people to hear and find a system that works for them...this one works for me. A Trip to the Dells
Got the opportunity to take a mini vacation with some other moms I homeschool with. Had about 5 hours notice to get all our stuff packed and go!! Again my favorite benefit to homeschooling and entrepreneurship! Brought all our school work...but most importantly I brought my weights and workout to stay committed to my challenge group.
We brought all the kids school work and did that every morning before hitting the pool. We had 8 kids but this was a 4 bedroom suite with 4 bathrooms and a large kitchen/dining room/living room. We had plenty of room and brought all our own food. I got the priviledge of doing our morning devotion. We focused on patience which was key for us this week as we waited in line and had a long walk to the parks each day. We really had a fun time!!

Pomegranate Salad with Walnuts and Cabbage

Ingredients:

½ medium head cabbage, finely shredded (about 5 cups)

Monday Meal Idea! Turkey Lettuce Wraps
This is a great recipe to try for tacos that is really tasty but less calories!!
And if you are doing 21 day fix...it's one green and one red for 2 tacos!!
Possibly a blue depending on your topping choices.
1 1/2 lbs of lean ground turkey breast
1 t garlic powder
1 tsp ground cumin
1/2 t sea salt
1 t of garlic powder
1 t of paprika
1 t of chili powder
1/2 tsp of dried oregano
1/2 medium red onion
1/2 green pepper
3/4 cup of water
3/4 cup of tomato sauce (I use homemade)
6 lettuce leaves
1 medium tomato for topping (optional)
1 cup of chopped cilantro for topping (optional)
Greek Yogurt and Avocado for topping (optional)
1) Cook turkey
2) Add spices
3) Add onion and pepper, cook everything til veggies are soft
4) Add water and tomato sauce, cook 10 to 12 minutes covered
5) Top Lettuce leaf with turkey mixture and toppings!

Just say No to other peoples piles of crap!
My theme lately has been drowning out negativity and being confident enough in yourself to not worry about what other people think. A lot of people have objections or are just negative in general about the concept of what I do. Thankfully I read a lot of positive things each day to help me combat all the negativity. I read the following this morning and it made me laugh out loud in my quiet dark house…so it is worthy of sharing. Now I have changed the wording so that it is a little more appropriate for social media I have summarized it…seriously, it’s worth reading.
You could actually be one of those people who don’t care what other people think of them. Those people aren’t unicorns. They really do exist. And you can really be one of them. Decide that it is a fact that the other person’s feelings about you have absolutely nothing to do with you. It has no bearing on your self-worth or who you are as a person. You are giving this other person a lot of power when you allow what they think and say affect your self-worth. You are just handing it over as it if rightly belongs to him or her…and it doesn’t. The writer asks “If someone had a big pile of crap in their arms and tried to give it to you, would you take it? Or would you say “no thank you. That’s your pile of crap and I don’t want it.” Now what if you think of other people’s opinions, judgments, and criticisms in the same way? It’s their pile of crap, and you have the choice whether to take it from them or not. Duh. Don’t take it!

I am comfortable in my own skin. God made me...beautiful...worthy...enough. In the past, my confidence was built on something that could never be perfect or fill me up. God made me...and He made me capable. Because I am confident in all these things, I can use the gifts He has given me to the fullest.

Transformation Tuesday!
So you know how you try something and you love it and you
tell everyone you know about it? That is
how I am feeling right now about something…and if I don’t tell you about it and
offer it to everyone I know, I am really doing you a disservice. My team is AMAZING. Each of them brings something really special
to the team. We don’t work alone. That’s why it’s called a team. We work really hard together and our heart is
in this thing to help people and change lives. I think the message is skewed
sometimes. But what we do only has a
small piece to do with body transformations.
While body transformations most definitely happen along the way, what I
see happening most is the mind and heart transformations. With Wellness Warriors…it’s all about your
health and wellness as a WHOLE. We
deliver the whole package. There is no
magic pill or special diet or plan. It’s
a lifestyle choice that we help you achieve.
Do we fail? Yes, we are humans too. But we keep each other motivated and
accountable. And best of all we laugh
and have a good time. We have made lasting
friendships that I cannot even describe.
This company has only scratched the surface of a body transformation for
me. For me, it’s the transformation of
my mind and heart that have made the biggest change in my life. And no work out has done that for me (I am
not talking about yoga here). Im just talking about the choice to be happy in
my own skin…no matter what that may look like.

Monday Meals! Lentil Feta Salad
This lentil salad is a winner in so many ways. It takes a little bit of effort to chop all of those fresh veggies and herbs, but once you’re done, you’ve got enough food for a week’s worth of meals. Eat it in winter, spring, summer, or fall. It’s a good vegetarian source of protein and fiber and has only 221 calories per serving.
Total Time: 1 hr. 15 min.
Prep Time: 15 min.
Cooking Time: None
Yield: 6 servings, about 1½ cups each
Ingredients:
⅓ cup fresh lemon juice
2 Tbsp. extra-virgin olive oil
½ tsp. dried thyme (or 1½ tsp. chopped fresh thyme)
Sea salt and ground black pepper (to taste; optional)
3 cups cooked lentils
½ cup crumbled feta cheese
1 medium cucumber, finely chopped
3 medium celery stalks, finely chopped
2 cups quartered cherry tomatoes
1 medium red bell pepper, finely chopped
¾ medium red onion, finely chopped
½ cup fresh parsley, chopped
¼ cup fresh mint leaves, chopped
Preparation:
1. Combine lemon juice, oil, and thyme in a small bowl; whisk to blend.
2. Season with salt and pepper if desired. Set aside.
3. Combine lentils, cheese, cucumber, celery, tomatoes, bell pepper, onion, parsley, and mint in a large bowl; mix well.
4. Drizzle with dressing; toss gently to blend. Refrigerate, covered, for 1 to 12 hours.
5. You can eat it after an hour, but the next day is the best!

Happy Valentines Day - Update on Foster Care
Yesterday we spent our Valentines Day away from home all day. We were with each other but we were completing PRIDE classes #3 and #4. These classes focused on abuse, attachment and loss. Not very "loving" things to talk about on such a love filled holiday. I'm glad that we were able to spend it together anyway. And we are that much closer to completing what is needed for fostercare.
We completed class #1 and #2 last week and #3 and #4 yesterday. So we have done 12 hours. We have 15 hours left and 2.5 more Saturdays. So we are almost there! And most of our paperwork has been filled out. We have a couple more home studies to complete in the next couple of weeks as well. Then everything we will be sent off to be approved by the state.
We are also officially "Safe Family" approved. So we could potentially receive a call for that.

Meal Plan #3 with grocery list and steps (21 Day Fix Extreme Approved)
Meal Plan #3 – 21 day fix extreme approved
This plan is super simple as you will eat the same things
every day. It makes it easy to plan these meals but you have to keep this in
mind and hope you don’t burn out on eating the same things each day. This plan
will give you approximately 4 reds, 4 greens, 2 yellows, 2 purples, 1 blue, 1
orange and 2 TBs.
Meal 1
Shakeology with almond milk, half of banana (or other fruit)
and PB2 (1 red, 1
purple, 1 TB)
Meal 2
Oatmeal w/ Fruit (1 yellow,
1/2 purple) See recipe on my recipe page. Or
cook oats according to package and top with fruit and almond milk or agave
sweetener.
Meal 3
Chicken with Veggies and Brown Rice/Quinoa (1 red, 1 green, 1 yellow) See recipe on Recipe page.
Either Boiled veggies or veggie stir fry (recipe below)
Meal 4
Tilapia with Hummus and raw veggies (I did cucumbers, red
and orange peppers), sunflower seeds (1 red, 1 blue, 1 green,
1 orange)
Meal 5
Turkey Lettuce Wraps (1 red, ½ purple, 1 green)
Recipe for Turkey Lettuce Wraps:
1 ½ ground turkey
1tsp garlic powder
1 tsp ground cumin
½ tsp of sea salt
1 tsp chili powder
1 tsp of paprika
½ dried oregano
½ medium onion, chopped
½ green bell pepper, chopped
¾ cup of water
¾ cup of tomato sauce
6 large lettuce leaves
1 medium tomato, chopped
1 cup of cilantro
1)
Cook turkey on stove for 5 minutes or until no
longer pink
2)
Add garlic powder, cumin, salt, chili powder,
paprika, and oregano; mix well
3)
Add onion and bell pepper, cook 4 to 5 minutes
4)
Add water and tomato sauce, bring to boil and
reduce heat…cover 10 to 12 minutes
5)
Top each lettuce leaf evenly with turkey mixture,
tomato, and cilantro
Recipe for Veggie Stir Fry
25 asparagus – cut up
1 pepper – any color
1 onion – cut up
3 to 5 carrots – cut up
Heat 4 tsp of olive oil in a pan. Add all veggies and garlic
and stir fry until 3 to 5 minutes until veggies are tender/crisp
My family will be eating the Turkey lettuce wraps as regular
tacos. I also bought enough fish for
them. So they will have tacos twice and fish once this week.

list is just if you are cooking for yourself and not family)

20 ounces of Tilapia
1 ½ lbs of ground turkey
20 to 30 oz of chicken
Produce
3 cups of carrots, plus some for carrot stick snacks
3 red onion
1lb of asparagus
5 garlic cloves
5 T of lemon juice (for fish)
Fresh Dill (for fish)
1 Red pepper, slice
1 Orange pepper, slice
1 Cucumber, slice
3 Green Pepper
6 Lettuce leaves
1 Tomato
1 cup fresh cilantro
5 cups of fresh fruit
2 ½ bananas for shakes
5 cups of mixed veggies (I like to do snap peas, carrots, broccoli)
Spices
Salt
Pepper
Olive Oil
Cumin
Paprika
Chili Powder
Oregano
Refridgerator
Almond Milk
Hummus
Boxed/Canned
Tomato Sauce
Steel Cut Oats
Natural PB or PB2
Brown Rice
Quinoa
SunFlower seeds
Steps:
In crock pot, cook oatmeal, cool, and portion out.
Grill all chicken.
Boil 5 cups of veggies
Portion out fruit for oatmeal
Cut up all veggies: Dice red onion & green pepper. Slice
up red and orange peppers and asparagus, and cucumbers, and carrots.
Cook up veggie stir fry, divide into 5 containers.
Divide up raw veggies for snacking. (red pepper, orange
pepper, cucumber, carrots, etc)
Bake fish: Add a TB
of lemon juice and ½ tsp of dill to each piece of fish. Bake 400 for about 10 minutes. Cool and store in fridge.
Cook up turkey and prepare it for turkey taco wrap
recipe. Cool and store in one container.
Measure one red out per day.
Cook Brown Rice and Quinoa and divide evenly with chicken
and boiled veggies. Use yellow container to divide it.

I saved a grocery list "template" in word on my computer. I shop a certain way in the store (usually Meijer), so my list goes in the order that I shop the store. It's nothing fancy but it gets the job done. I put things on the list that I normally buy every single week and save it. Each week I print it off and add my other items to it. It's not too much but it does help me not forget certain things! There a lots of cute ones and I own one but am not able to put it on the blog yet...can't figure out how to attach a document. And I never use the cute ones :) Heres' what mine looks like:

Fit Tip Friday - Modified Push up
Did you know there was a way to do a modified push up?
Here are 3 tips on how to do the perfect push up (sometimes you need to practice in front of the mirror)
1) Get into plank position and make sure your hands are positioned slightly wider than your shoulders. Tighten your core.
2)Lower your body until your chest almost touches the floor, tucking your elbows in as you do. When you're at the bottom, your arms should be at a 45 degree angle.
3)Keep your back flat and do not let your back or hips sag. If you cant do a push-up on your toes yet, don't give up. Do them on your knees with your toes pointed up and you'll still get a great workout.

“What I’m looking for in moringa sources that may possibly be used for Shakeology are plants with deep green leaves growing in rich, fertile soil. I examine the color and the activity of the soil and if it’s dry and clumpy, it’s bad. I look at what life is like around the moringa plants. What’s their spacing like and do the farmers implement crop rotation? These are just some of the factors I’m evaluating when on the hunt for the perfect crop.”Darin told us that if you grow moringa in quality soil, it WILL thrive. “Moringa is not governed by a specific geographical area, it’s ALL about the soil. Then I look at the age of the plants. And while young leaves are extremely vulnerable, they’re also very high in quality nutrients. So finding the perfect crop of moringa is somewhat of an art. But you know it’s a good sign when horses can’t stop eating this stuff.”

Darin said that moringa is a very easy plant to grow, which is why it thrives in underdeveloped countries. “But you’ve got to remember that sometimes these remote locations present huge problems due to the fact that there is very little zoning or regulations for businesses in those places.”Because Shakeology’s standards are so high, Darin’s team can’t just buy a bundle of moringa from a local market. “We need to know EXACTLY where our product is coming from,” Darin said. “There have been times when we’ve showed up to a potential ‘manufacturing facility’ and everything was being done under a tent or near cattle, and they’re washing the plants with well water. And while their bodies are used to all those microbes floating around, we would get extremely sick. And we permanently scratched that potential partner off our list.”
