Meal Monday: Healthy "fried" chicken

We love chicken but I get tired of the same old recipes.  I saw chicken drumsticks on sale this week so thought I would buy them which would force me to find a recipe.  I thought this one was pretty good!

Healthy Fried Chicken Recipe 


This chicken is baked without the skin on for a lighter alternative. Classic fried chicken has 560 calories, but this recipe is only 105 calories!
  • 2 3/4 lb Chicken
  • 2 cloves minced Garlic
  • 1 tbsp Mustard
  • 2 tbsp Sesame Seeds
  • 1 tsp Thyme
  • 1/2 cup Buttermilk
  • 1 tsp Hot Sauce
  • 1/2 cup Whole Wheat Flour
  • 1 1/2 tsp Paprika
  • 1 tbsp Baking Soda
  • Cooking Spray
  • Salt & Pepper


  1. Preheat oven to 425 F.
  2. Combine buttermilk with mustard, hot sauce, and garlic in a bowl with a whisk.
  3. Marinate chicken for 30 minutes to eight hours.
  4. Combine flour with paprika, sesame seeds, baking soda, thyme, salt and pepper.
  5. Transfer this dry mix to a plastic bag.
  6. Remove chicken from marinade and transfer to bag. Shake until coated.
  7. Prepare a baking sheet with cooking spray.
  8. Bake chicken for 40 minutes or until browned.
