Meal Monday - Chicken Tortilla Soup

Gluten Free Chicken Tortilla Soup




4 cups of diced chicken (cooked)
1 cup of picante sauce
1 cup of tomato sauce
1 cup of cheese sauce
1 cup of frozen carrots
1 cup of frozen corn
½ cup of diced onions
1 tsp minced garlic
½ tsp of ground cumin seed
½ tsp of mild chili powder
2 cups of chicken broth


Dump everything in the crock pot and cook on low for 6 to 8 hours.  Or dump in gallon zip lock for the freezer. You can put straight in the crock pot from frozen.

Parmesan Crusted Chicken

This was an amazing yummy recipe!



4 boneless chicken breasts (the thinner the better and easier to work with)
2 T olive oil
2 Large eggs
Salt and pepper for seasoning
1 t of onion powder
1 t of garlic powder
1 t of adobe seasoning
1 T of parsley
1 cup of bread crumbs (I used gluten free)
1 cup of grated parmesan
1/2 cup of mayo (I used part greek yogurt and part mayo)

Preheat oven to 400.

Brush chicken on both sides with olive oil.  Salt and Pepper both sides

In a small bowl beat the two eggs, then add in the garlic, onion, and adobe powder and parsley.

In a separate bowl add the breadbrumbs.

In a 3rd bowl mix the parmesan and mayo/greekyogurt.

Coat chicken with mayo/cheese mixture one both sides, pat it on tight.

Dip the chicken in the egg mixture then coat with bread crumbs.  Place in a pan that is coated in pam or oil...make sure not to layer the chicken on top of each other. Bake for 15 minutes, then flip and bake for 15 to 30 more (will depend on the thinkness of chicken).

Chicken Penne Rustica


This is one of my favorite recipes of all time. The sauce is just so authentic. This recipe makes 2 meals...eat one and put one in the freezer.

chicken broth

cornstarch

dried rosemary

teaspoons

dried thyme

teaspoons
cayenne pepper

cups
penne pasta, dried
3
cups
cooked shredded chicken

Tablespoon
grated Parmesan cheese #2

Melt butter over medium heat in a saucepan.  Add garlic and cook for 5 minutes, then add the wine and cook for another 5 minutes.  Add cream, Parmesan cheese #1, milk, chicken broth, cornstarch, rosemary, salt, thyme, and cayenne pepper. Stir well to combine.  Simmer for 10 minutes or until the sauce thickens.  While the sauce is cooking, cook the pasta al dente.  Once sauce has thickened, remove from heat and cover.  Drain pasta, then combine with sauce and cooked chicken.  Divide pasta mixture between indicated number of baking pans and top with parmesan cheese #2.

Cover tightly with foil, label, and freeze.  To serve: thaw in fridge.  Bake at 450 for 10-12 minutes until the top begins to brown.

Meal Monday: Healthy "fried" chicken

We love chicken but I get tired of the same old recipes.  I saw chicken drumsticks on sale this week so thought I would buy them which would force me to find a recipe.  I thought this one was pretty good!

Healthy Fried Chicken Recipe 


This chicken is baked without the skin on for a lighter alternative. Classic fried chicken has 560 calories, but this recipe is only 105 calories!
  • 2 3/4 lb Chicken
  • 2 cloves minced Garlic
  • 1 tbsp Mustard
  • 2 tbsp Sesame Seeds
  • 1 tsp Thyme
  • 1/2 cup Buttermilk
  • 1 tsp Hot Sauce
  • 1/2 cup Whole Wheat Flour
  • 1 1/2 tsp Paprika
  • 1 tbsp Baking Soda
  • Cooking Spray
  • Salt & Pepper


  1. Preheat oven to 425 F.
  2. Combine buttermilk with mustard, hot sauce, and garlic in a bowl with a whisk.
  3. Marinate chicken for 30 minutes to eight hours.
  4. Combine flour with paprika, sesame seeds, baking soda, thyme, salt and pepper.
  5. Transfer this dry mix to a plastic bag.
  6. Remove chicken from marinade and transfer to bag. Shake until coated.
  7. Prepare a baking sheet with cooking spray.
  8. Bake chicken for 40 minutes or until browned.
