Meal Monday - Pork Ragout

Pork Ragout (Paleo and gluten free)
1 pork roast
1 ½ cups diced tomatoes
5 tsp of minced garlic
½ cup of diced onions
1 T of balsamic vinegar
1 T of leaf basil
1 T parsley flakes
1 t leaf oregano
2 cups of frozen carrots
2 cups of diced celery

Place everything in the crock pot and cook on low for 6 to 8 hours.  You can put this in the freezer and dump straight from the freezer!
